Rice and Veggies - Arroz y vegetales

Hi, everyone! Hope you're having a wonderful weekend :) Today I wanted to share an easy, healthy, and, above all, delicious meal. I love vegetables and fruits of all kinds, that's what I enjoy eating the most. I'm not a big fan of meat -I don't eat beef and I eat very little pork. I do like chicken and fish-. So, anyway, I'm always trying to find new ways to incorporate a lot of veggies into my meals. A few weeks ago I bought a big bag of soybean sprouts so I decided to cook them with rice and vegetables. And this is what I came up with.

¡Hola a todos! Espero que estén disfrutando del fin de semana :) Hoy quería compartir con ustedes una receta muy rica, que además de ser muy saludable es súper fácil de hacer. Me encantan los vegetales y frutas de todo tipo, eso es lo que más me gusta comer. La verdad es que no soy muy adepta a las carnes (no como carne roja y como muy poquito cerdo, el pollo y el pescado sí me gustan). Pero bueno, por eso es que siempre trato de encontrar nuevas maneras de incorporar muchas verdurdas a mis comidas. Hace unas semanas compré una bolsa bien grande de brotes de soja y decidí cocinarlos con arroz y vegetales. Esto es lo que salió.



Yamaní & White Rice with Soybean Sprouts and Veggies


Ingredients:

-1 cup white rice
-1 cup yamaní rice
-2 cups soybean sprouts
-1 cup mushrooms
-1/2 cup portobello mushrooms
-2-3 carrots
-2 fennel bulbs
-1 red pepper
-1 tablespoon soy sauce
-1 tablespoon sugar
-Sliced almonds
-Golden raisins

Directions:

1. Cook the white and the yamaní rice. Remember: both these types of rice have different cooking times, white rice is done much faster than yamaní (yamaní usually takes about 25 minutes after water starts boiling) so you should cook them separately. Set aside.

2. Cut the mushrooms and the portobello mushrooms (I make sure not to cut them too small, otherwise they may come apart when cooking them). Cut the carrots, the fennel bulbs and the red pepper in matchstick shape (julienne).

3. Heat 1-2 tablespoons of olive oil in a skillet and then add the carrots, the fennel bulbs and the red pepper. After that, add the soy sauce and the sugar. Cook for about 5 minutes or until the vegetables are a bit soft but still have a bite to them. If the veggies are a bit dry, add some water. Then, add the mushrooms and the portobello mushrooms. Cook a couple of minutes more. Finally, add the soybean sprouts and cook for another minute.

4. In a big salad bowl, add the white and the yamaní rice. Incorporate the veggies and, finally, sprinkle with sliced almonds and golden raisins. I love almonds and raisins so I always add a big handful to the mix.

And that's it! There you have a delicious and healthy meal, which doesn't require any type of meat to make it super yummy :) This recipe doesn't include any type of animal products so it's also good for people who are vegan. Of course, you can use more or less of all the ingredients I listed, and you can also substitute any of the vegetables for the ones you like best. But believe me when I say all those veggies go really well with both types of rice. Hope you try it, and enjoy! See you next time!

Arroz yamaní y arroz blanco con brotes de soja y vegetales


Ingredientes:

 -1 taza de arroz blanco
-1 taza de arroz yamaní
-2 tazas de brotes de soja
-1 taza de champiñones
-1/2 taza de hongos portobello
-2-3 zanahorias
-2 hinojos
-1 morrón rojo
-1 cucharada de salsa de soja
-1 cucharada de azúcar
-Almendras fileteadas
-Pasas de uva rubias


Instrucciones

1. Cocinar el arroz blanco y el arroz yamaní. Recuerden que ambos tipos de arroz tienen distinto tiempo de cocción. El arroz blanco se cocina mucho más rápido que el yamaní (el yamaní está listo alrededor de 25 minutos después de que el agua empezó a hervir), así que cocínenlos por separado.

2. Cortar los champiñones y los hongos portobello (yo siempre trato de no cortarlos muy chiquitos, si no se pueden despedazar cuando los cocino). Cortar las zanahorias, los hinojos y el morrón rojo en juliana.

3. Calentar una o dos cucharadas de aceite de oliva en una sartén. Agregar las zanahorias, los hinojos y el morrón rojo. Luego, agregar la salsa de soja y el azúcar. Cocinar por 5 minutos o hasta que los vegetales se hayan cocinado un poco, pero que todavía tengan consistencia. Si las verduras están un poco secas, agregar un poco de agua. Después agregar los champiñones y los hongos portobello. Cocinar por dos minutos más. Finalmente, agregar los brotes de soja y cocinar un minuto más.

4. En un bowl grande de ensalada, agregar los dos tipos de arroz y luego incorporar los vegetales. Por último, agregar por arriba almendras fileteadas y pasas de uva rubias. A mí me encantan las almendras y las pasas, así que me gusta agregar un buen puñado.

¡Y eso es todo! Ahí tienen un riquísimo y saludable plato, que no requiere ningún tipo de carne para que sea súper rico :) Esta receta no incluye ningún tipo de alimento a base de animal, así que también es una muy buena opción para los veganos. Por supuesto, pueden usar más o menos de todos los ingredientes que utilicé, como también pueden reemplazar cualquier vegetal por el que más les guste a ustedes. Pero créanme cuando les digo que todas esas verduras van muy bien con los dos tipos de arroz. ¡Espero que prueben esta receta y que les guste! Nos vemos la próxima.

Taking it literal: This time around it was a bit hard to think of what to add to this section, so since the recipe calls for two types of rice, soybean sprouts and soy sauce, I thought of the word "chopsticks", because surely this meal could be eaten with a pair of chopsticks, right? Therefore, one of my favorite movies came to mind - "Big" and that wonderful chopsticks sequence at FAO Schwarz with the awesome Tom Hanks and Robert Loggia. I'd dare say this is one of the most famous scenes from the movie, wouldn't you? :)


Literalmente: Esta vez me costó un poco pensar qué agregar a esta sección, así que ya que esta receta lleva dos tipos de arroz, brotes de soja y salsa de soja, se me vino a la mente la palabra "palitos chinos", porque seguro que este plato se podría comer con palitos chinos, ¿no? Entonces, pensé en una de mis películas favoritas: "Quisiera ser grande" y esa genial escena con el piano en la juguetería FAO Schwarz con el increíble Tom Hanks y Robert Loggia. Diría que es una de las escenas más famosas de la película, ¿no? :)
