Hi, everyone! Hope you had a great start to the week :) Today I bring you another healthy and tasty recipe. One afternoon a couple of months ago, I was trying to see what I could do with some eggplants that I had in the fridge, so I decided to cook them in the oven and then mix them with some rice, and this is what turned up. This salad is really delicious and it's also quite satisfying, so it can be eaten as a main dish or, of course, it can be served as a side dish.
¡Hola a todos! Espero que hayan empezado muy bien la semana :) Hoy les traigo otra receta sana y deliciosa. Hace unos meses, antes de la cena, estaba viendo qué podía hacer con unas berenjenas que tenía en la heladera. Me decidí por cocinarlas en el horno y después mezclarlas con un poco de arroz, y esto es lo que salió. Esta ensalada es muy sabrosa y llena bastante, así que se puede comer como plato principal o también como un acompañamiento.
Rice, Eggplant and Chickpea Salad
Ingredients
- 2 cups yamaní rice
- 3-4 eggplants
- 1 can chickpeas (white beans are good too)
- green olives
- golden raisins
- 1 teaspoon red pepper flakes
- thyme
- rosemary
- olive oil
- salt and sugar
Directions
1. Cook the yamaní rice and when it's done, drain it and put it in a salad bowl. Add some olive oil.
2. Meanwhile, cut the eggplants in cubes, put them in an oven tray and sprinkle them with thyme, rosemary and a bit of olive oil. Cook in the oven for about 10 minutes. Remove from the oven, add about 1 tablespoon sugar (you can use more or less than that, or none at all, it all depends on your taste, but the sugar brings out the flavor of the eggplants and it makes them taste even better) and some salt. Cook for another 10 minutes or until the eggplants are done.
3. Add the eggplants to the bowl with the rice. Then add the chickpeas, olives, raisins and red pepper flakes.
Enjoy! This recipe, just like the previous one, doesn't call for any animal products so it's good for vegetarians and vegans alike :)
